Obatzda is a Bavarian Cheese Dip that is most often served with hot pretzels. However it pairs just as well with a hardy bread such as pumpernickel or rye.
Ingredients:
- 5 oz Brie Cheese, Cut into Pieces
- 5 oz Cream Cheese, Softened
- 3 T Heavy Cream
- 0.5 oz Brandy
- 2T Chives, Finely Chopped
- 1 T Butter, Softened
- 1 T Capers, Finely Chopped
- 1 t Salt
- ½ t Black Pepper
- ½ t Paprika
- 1/8 t Nutmeg
Method:
- Combine all of the ingredients in a food processor and pulse until just combined. (You can also use a stand mixer with the paddle attachment.) There should still be small chunks of brie in the mixture. The spread should be creamy and a very light pink in color. Adjust seasonings as desired.
