Ingredients:
Crust:

4 C Flour

2T Baking Powder

½ t Baking Soda

2 t Salt

¼ C Butter, Cubed

¼ C Bacon Fat

2 C Buttermilk
Method:
Buttermilk Biscuits:
Add the flour, baking powder, baking soda and salt into a large mixing bowl and mix until incorporated. Add the butter and bacon fat and mix with a pastry cutter until the butter is nearly incorporated, with small pieces remaining.
Add the buttermilk, and mix by hand. Leave the dough a little crumbly, be careful not to overwork.
Remove the dough from the bowl and work it into a 12”x8” rectangle about 1” thick. Cut the rectangle 3×6 for a total of 18 pieces.
Transfer the biscuits to a greased parchment paper, leaving space in between the biscuits. Lightly brush with egg wash and bake in n oven set at 375 for 15 minutes, rotating halfway through.
