Ingredients:

6 Eggs

9 oz Milk

19 oz All Purpose Flour

¼ C Parsley, Very Finely Chopped

½ t Nutmeg, Grated

1 T Salt

1 t Black Pepper
Method:
Mix all the wet ingredients into a large mixing bowl.
Mix all the dry ingredients into a separate mixing bowl.
Slowly add the dry to the wet, using a spatula to fold and incorporate.
Bring a large pot of salted water to boil while the dough rests.
Once the water is boiling, use a spätzle press to work the dough into the water. This should be done in three batches. Stir the spätzle in the water to make sure it doesn’t clump.
Boil for about 3 minutes.
Remove the spätzle with a slotted spoon and place in a mixing bowl. Lightly toss with oil to prevent clumping.
