Chocolate Amaretto Pot de Crème
9 oz Semi Sweet Chocolate
1 ½ Cups of Whole Milk
1 Cup of Heavy Cream
6 Egg Yolks
1/3 Cup of White Sugar
½ t Salt
1 ½ Teaspoons of Almond Extract
Place the chocolate in the blender. Whisk the milk, cream, yolks, sugar, and salt in a heavy bottomed pot over medium heat. Cook the mixture, stirring constantly with a spatula, until the mixture is thick enough that when you drag your finger along the back of the spatula, the mixture holds the path your finger created for at least five seconds, this should take about 10 minutes.
Immediately pour the milk mixture, over the chocolate in the blender. Cover and blend until combined and smooth. Add the almond extract, and blend for an additional fifteen seconds.
Pour into coffee cups and refrigerate for at least 4 hours.
