Smoky Lemon Honey Glaze/Marinade:
1 C Honey
5 Lemons, Juiced
1 T Worcestershire
2 t Liquid Smoke
1 T Salt
1 t Black Pepper
Method:
Preheat an oven to 400 degrees.
Whisk the ingredients in a mixing bowl thoroughly until incorporated. Pour ¼ of the mixture into a separate container and reserve to glaze finished chicken.
Toss a quartered chicken in the marinade and allow to sit for 12 to 24 hours.
The chicken can be seared in a cast iron skillet and finished in the oven or it can be cooked on a hot grill. The honey in the marinade with caramelize the skin and it will appear burned. This is a good thing because that is where most of the flavor will come from. The brining process will help the chicken stay moist.
Once the chicken is cooked through, generously brush the chicken with the glaze that was set aside.
