Smoked Vermouth Turkey Gravy Recipe
INGREDIENTS:
4 Qts Turkey Stock (Preferably Homemade)
2 C Red Wine
½ C Yellow Onion, Small Diced
1 Clove of Garlic, Crushed
2 Thyme Sprigs
½ C Butter
½ C Flour
2 T Smoked Sweet Vermouth (Or 2 T Sweet Vermouth and ½ t Liquid Smoke)
1 T Soy Sauce
METHOD:
Smoked Vermouth Turkey Gravy:
Combine the turkey stock, red wine, onion, garlic and thyme in a heavy bottomed sauce pot. Bring the liquid to a boil and then reduce the heat to medium. Allow the liquid to reduce by half.
In the meantime, gently melt the butter in a sauce pan. Be careful not to brown the butter. Once the butter is completely melted, whisk the flour in until fully incorporated to create a roux. Cook over low heat for about 10 minutes, stirring often.
Once the liquid is reduced by half, strain the liquid and discard the solids. Return the stock to the pot and slowly add the roux to the stirring constantly. Return the liquid to a boil and then simmer for approximately ten minutes.
Add the smoked sweet vermouth (or the shortcut if you don’t have smoked vermouth lying around) and the soy sauce.
Season with salt and black pepper to taste.
