Ingredients:

1# Butter, Softened

1 T Minced Garlic

¼ C Roasted Garlic Puree

½ C Parmesan, Finely Grated

3 T Parsley, Chopped

1 T Salt

1 t Black Pepper
Method:
Preheat the oven to 375.
Place 1 cup of cleaned garlic cloves in a small pie pan and cover with extra virgin olive oil.
Bake in the oven for about an hour, uncovered, or until the garlic is golden brown.
Allow to cool in the oil until room temperature.
Strain the garlic and mash with a mortar and pestle until it is a fine puree.
(Reserve the oil and use for salads, croutons, or any other recipe where garlic oil might add a little something extra!)
Once the roasted garlic puree is made, add all of the ingredients to a kitchen aid and beat with the paddle attachment until light and fluffy.
This roasted garlic butter makes amazing garlic bread (a favorite of the kitchen staff at Tarragon) and is also a great addition to a grilled steak or roasted potatoes.
