This recipe is the perfect substitute for meat during grilling season, but I also love to serve it alongside steak. I think these mushrooms taste so good, they actually outshine a good cut of steak and take center stage. Enjoy!
Portabella Mushrooms:
6 Portabella Mushrooms, Cleaned
1 Shallot, Thinly Sliced
4 Cloves Garlic, Crushed
3 Sprigs Thyme
2 Sprigs Rosemary
Olive Oil to Cover
Remove the stem from the portabella mushrooms. Next, using the side of a spoon, gently scrape the gills from the mushrooms.
Place the mushrooms in a roasting pan and evenly coat with the shallots, garlic, thyme, and rosemary. Fill the roasting pan with oil until the mushrooms are half covered. Wrap the roasting pan with foil and cook in the oven at 400 degrees for 20 minutes.
Remove the mushrooms from the oil and season with salt and pepper.
I’m thinking I would serve this as a first course or cut in smaller pieces for an appetizer with other veggies, etc.
