Ingredients:

6 Egg Yolks

2 ½ C Heavy Cream

3 Oranges, Zested

1 oz Grand Marnier

½ C Sugar

¼ t Salt

¼ t Cardamom
Method:
- Whisk all of the ingredients together in a sauce pot until the egg yolks are completely incorporated.
- Then, using a rubber spatula, gently heat the mixture over medium heat, stirring and scraping the sides constantly, until the mixture is thick enough to coat the back of the spatula.
- The liquid should reach a temperature of about 175 degrees.
- Do not let the mixture boil.
- Allow it to cool overnight before using.
