March 2017 — Letter from Jason

With the advent of spring upon us, I am filled with the usual enthusiasm of the season. Farms are coming alive with the arrival of new births. Watching lambs, calves, and foals exploring their new world with the security of their mothers close by is easily one of my favorite things to observe. The emergence of the flowers and forest undergrowth with the slow warming of days builds the anticipation of the year’s harvest. I recently have met with two of our next artists who are creating installations in the Holmes County Open Air Art Museum, and every meeting I have with a new artist sparks that childlike awe and wonder of what could be. Yes, spring is a magical time of year, especially at The Inn at Honey Run.

This spring is especially exciting because we are starting to layout plans for the next phase in our culinary development. We purchased 2 additional acres of land on County Road 203 that borders the back side of our property, and we will be creating a garden that will provide fresh vegetable, fruits, and herbs for Tarragon. The garden will also provide another environment for some additional beehives to add to the dozen hives we already house on the property. In addition to the two-acre garden, on a small piece of property along County Road 203, we will be adding a small greenhouse built from recycled windows from The Inn, a composting system where all food waste in addition to organic materials from the property will be processed and used in the garden soil, and a raised garden area that will cultivate more rare vegetable species that the Chef will use in special offerings throughout the season. The final piece of the gardens will be a custom-built chicken coop that will allow the chickens to roam freely but be protected from predators, providing Tarragon with a daily fresh source of eggs. This entire plan will take the next couple of years to fully develop, but we are filled with excitement of the possibilities that are to come in taking this next step in our farm-to-table dining offerings.
